The short answer
An outdoor kitchen with a pizza oven pairs a grill station with a built-in or countertop oven that reaches roughly 700 to 900°F, hot enough to bake a Neapolitan-style pizza in about 90 seconds. Wood-fired ovens deliver smoky flavor and a traditional dome; gas ovens heat faster and are easier to control; hybrid models do both. The oven needs a noncombustible base, clearance to combustibles, a flue or chimney, and a landing counter beside it for prep and serving.

## How Is a Pizza Oven Built Into an Outdoor Kitchen?
Built-in ovens sit on a masonry or steel-framed base, usually at counter height or slightly above so the cook can see inside the mouth without bending. Refractory dome ovens, either modular kits or assembled from brick, hold heat for hours and can roast and bake after the fire dies. Prefabricated stainless ovens set into an island or onto a counter and heat up faster. Whichever type you choose, the oven floor must be insulated from the base below, and a chimney or flue carries smoke up and away from guests.

Placement is the next question. The oven works best at the end of a run or on its own wing, with a heat-resistant counter on one side for dough, toppings and a pizza peel. A wood-fired oven also needs dry storage for split hardwood. Gas ovens need a gas line sized for the burner, either natural gas or a propane tank location. Many owners place the oven within reach of the grill and sink so one person can cook while still talking to guests at the island.

| Oven type | Heat source | Strengths | Trade-offs |
| --------- | ----------- | --------- | ---------- |
| Wood-fired dome | Hardwood | Smoky flavor, holds heat for hours | Longer warm-up, ash cleanup, wood storage |
| Gas built-in | Natural gas or propane | Fast heat-up, steady temperature | Needs a gas line, less smoke flavor |
| Hybrid | Gas with wood option | Flexibility for weeknights and parties | Higher price, more components |
| Countertop | Gas, pellet or wood | Lower cost, portable | Smaller cooking area, less presence |

## What Works Under a Florida Lanai?
Most Southwest Florida outdoor kitchens sit under a covered lanai or inside a screen cage, which makes ventilation the deciding factor. Wood smoke needs a properly sized flue that passes through the roof with manufacturer-specified clearances, and many gas ovens need a vent hood or chimney when installed under cover. Screen enclosures should have enough height around the oven that heat and smoke do not scorch the screen or linger. Some HOAs restrict wood burning or require approval for a chimney, so we check the rules early.

Salt air and rain are hard on metal parts. Stainless ovens near the Gulf hold up better in 316 grade, and a fitted cover protects the mouth and flue during summer storms. Refractory domes need a waterproof outer finish so trapped moisture does not crack them during the first fire after rain. Gas lines and electrical work for oven lights or rotisseries are permitted work in Lee and Collier counties. Our outdoor kitchen packages start from $18,000, and the oven can be part of the original layout or added as a wing later.

## Pizza Oven Outdoor Kitchen Questions

### Is a gas or wood-fired pizza oven better?
Wood-fired ovens give a classic smoky flavor and a traditional look but take longer to heat and need wood storage. Gas ovens reach temperature faster and are easier for weeknight use. Hybrid ovens let you use gas most of the time and burn wood when you want the flavor.

### Can a pizza oven go under a covered lanai?
Often, yes, if it is designed for it. Wood-fired ovens need a flue that exits the roof with proper clearances, and gas ovens may need a hood or chimney under cover. Following the manufacturer's installation guide and local code is essential, and the HOA may need to approve a chimney.

### How hot does an outdoor pizza oven get?
Most dedicated pizza ovens reach roughly 700 to 900°F on the oven floor, which bakes a thin Neapolitan-style pizza in about 90 seconds. Dome ovens hold heat long after the fire burns down, so they can also roast meats, vegetables and bread at lower temperatures.
